1 1/4 cups quinoa
4 medium beets, trimmed
1/2 large, seedless cucumber, chopped
1 pint yellow cherry tomatoes, halved
1 cup green beans, blanched and cut into 1-inch pieces
1/2 cup chopped flat-leaf parsley
After ringing the quinoa, cook it on a saucepan with 2 1/2 cups water and a pinch of salt. Bring to a boil, reduce to a simmer, cover and cook for up to 15 minutes. Let it cool off, and then refrigerate for 2 hours. Cook beets until tender (35-45 min) while covered by an inch with water with 1 tsp. salt. Cool, peel, and chop them into 1/2-inch cubes. Mix together and use a dressing from balsamic vinegar, lemon juice, salt, pepper, and extra-virgin olive oil.

Alicia Silverstone’s Pressed Salad
“The Kind Diet”, Alicia Silverstone’s vegan cookbook includes one of the best celebrity salad recipes, with a fresh twist on a classic, for 6-8 servings:
1/2 head napa cabbage
1/4 head radicchio
5-6 red radishes
1 fennel bulb, stalks and fronds removed
1 carrot, peeled
2 tsp fine sea salt
After you mix all the thinly sliced ingredients in a bowl, add the salt slowly, while pressing down with your hands. Keep it up until they start wilting and releasing liquid. Cover them with a small plate with a weight on top (full tea kettle). After 35-60 minutes, pour out the excess liquid and squeeze before serving.

3 cups finely chopped romaine lettuce
2 ripe beefsteak tomatoes, seeded and finely diced
3/4 cup mix of 1/2-inch cubes and reduced-fat white cheddar cheese and 1/2-inch cubes reduced-fat Monterey Jack cheese
1/2 cup canned red beans, rinsed and drained
<1/2 cup canned chickpeas, rinsed and drained
1/2 cup nicoise olives, pitted and coarsely chopped
tortilla chips and/or fresh chives for garnish
Make the dressing in a blender using 2 tbsp balsamic vinegar, 1/2 tsp Dijon mustard, 1/2 tsp kosher salt, 1/4 tsp freshly ground pepper, and 4 tbsp canola oil.
