What can I do to my hair (product, cut...) my hair to get it to lie less poofy? :]

I just cut my hair today (I generally do my own), but it turned out a little poofy (I have very thick hair). I already thinned out the middle layer ridiculously. Is there any way to cut it to get it to lie a bit flatter? This first pic is of me. :] As it dried a bit more, it poofed out to where it doesn't curl in as nicely at the bottom and a bit more blunt. Here's a picture of more what I'd like to go for... :], After it dried a bit more (apparently some of the poofiness was just from humidity), it lay a bit flatter. It's already layered, but I thinned it a bit more, and that seemed to help.

How to keep a cowlick on your fringe lying straight?

I don't have a full fringe, but I'm finding my sidebangs don't lie right half of the time. I've found ways around it, but I've been considering getting a full fringe. Is it possible, having a cowlick? Thanks! :]

Asian hair cutting tips, anyone?

I'm half Korean, and my hair's fairly typical "Asian hair", except for wavier. I'm afraid of cutting my hair too short because of poofing. Even layering is touchy. Does anyone know of a good tutorial for cutting Asian hair? I do my own hair nowadays. There's a special way of cutting it to decrease volume, but not look choppy or have a million flyaways. Tips? Vids? Tutorials? Thanks! :] Something like this, Or this. :]
